How I love thee, Asian-style Noodle Soup

I don't know how authentic this recipe is. And frankly, I don't care.

What I do know is it's delicious.

Super easy to make, and totally customizeable.

Vegetable variations I use are bok choy, mushrooms, and/or snap peas.

Throw some diced up chicken breast, leftover pork tenderloin, or tofu in for a protein boost.
